Potato Cakes

I love them.

Every time the lady goes to M&S for the £10 deal, she always gets me the Potato Croquettes.

I can’t explain why (maybe it’s my Irish DNA), but if you try this recipe, you’ll understand why.

Ingredients

  • 200g Potatoes
  • 50g Cheddar Cheese
  • 1 Onion
  • 100g Breadcrumbs
  • 2 Eggs
  • 4tbsp Flour

How to make Potato Cakes

Pre-Heat your oven to 200C/400F/Gas Mark 6.

1. Make up my foolproof mashed potato recipe, leaving it aside to cool down once mashed.

2. Put the potato into a bowl, along with the chopped up onion, grated cheese and a tablespoon of the flour. Add in Salt and Pepper to taste.

3. Combine thoroughly into a large ball.

4. Flatten the ball out onto a floured surface, and roll until it is about 3cm thick. To be honest, the thicker the better, as it will be easier to panne.

5. Then cut out rounds using a cookie cutter, again the size is your choice. I like doing smallish ones.

6. Panne in the flour, egg and breadcrumb.

7. Put them into a frying pan, and fry on both sides, 5mins per side.

8. Put them into the oven to cook for a further 10mins.

Enjoy with ketchup or some BBQ Sauce.
