Fajita from Scratch

Fajitas, one of my dessert island meals, made from scratch. Spicy!

You know yourself, buying an Old ElPasso is as simple as pressing an online button and having it delivered in the Tesco truck.

But if your like me, you crave the rub after it’s gone, and I for one, want to continue using it on other foods.

So I thought it would be nice to create my own, which isn’t that far away from the original, but given the FatLad swivel.

Ingredients

The Spicing

  • 1 tablespoon Chili powder
  • 1 teaspoon Mustard Powder
  • 1 teaspoon Paprika
  • 1/4 teaspoon Cayenne pepper
  • 1/4 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1 teaspoon ground black pepper

The Fajita

  • 4 Flour Tortillas
  • 2 Chicken Breasts
  • 2 Onions
  • 2 Red Peppers

How to make Fajita

Pre-heat your oven to 180C/350F/Gas Mark 4.

1. Make my recipe for Flour Tortillas, or get some from the shop.

2. Cut the chicken into strips, and put in a bowl.

3. Make up the spice mix in a tub.

4. Chop the pepper and onions into strips, the same thickness as the chicken.

5. Cover the chicken in half of the spice mix, and ensure it is mixed in well.

6. Put the chicken strips in the bottom of the baking tray and splash some olive oil over the top.

7. Cover the chicken in peppers and then the onion.

8. Sprinkle the remaining rub over the vegetables, along with some more olive oil.

9. Put into the oven and cook for 30mins.

10. Halfway through the cooking, mix all of the ingredients together.

11. Place a quarter of the mixture in the middle of the tortilla, cover in cheese and roll into a fajita.

Try serving these with guacamole and some yoghurt/mayo.
