Pesto Pizza

Take a pantry and fridge worth of leftovers, and create this wonderful pizza with it. Mmmmmmm Pesto.

There comes a time were even I run out of things in my pantry, and have to make whats known in my house, as a throw together dinner.

So, I had some leftover Wholemeal Pizza Dough, and some leftover Pesto, and came up with this beauty of a meal.

Just in time for the movie of the night.

Ingredients

For the Base

  • 200g Strong White Flour
  • 250g Wholewheat Flour
  • 7g Dry Active Yeast
  • 300ml Water
  • 3tbsp Olive Oil
  • 1tbsp Salt

For the Pesto

  • Bunch of Basil
  • 4tbsp of Olive Oil
  • 1 clove of Garlic
  • 20g Parmesan Cheese
  • Salt & Pepper

For the rest

  • Several slices of salami/pepperoni
  • 1 Ball of Mozzarella
  • 50g Parmesan Cheese

Directions

Pre-heat your oven to as high as it goes.

1. Make up a batch of my wholemeal pizza base, following this recipe.

2. Make up some pesto, following my wild rocket pesto recipe. Just substitute the rocket for basil. Or just use rocket. Your choice.

3. Roll out the base into a 12inch circle, and cover with the pesto. Place on top of a pizza stone or tray.

4. Add all of your meats onto the pizza first, before adding the cheese.

Bake in your oven for at least 20mins, just check the base after this time.
