This one came from a simple request, how do we make a full meal yet have absolutely no carbs in it.
When I say carbs, I mean no pasta, rice, beans or potatoes. Or Bread.
Booooooooo!
Porkatouille is born!
Ingredients
- 4 Pork Chops, fat removed
- 1 Chorizo Sausage
- 3 cloves of Garlic
- 1 Carrot
- 1 large Red Onion
- 1 Courgette
- 4 Spring Onions
- 1 Green Pepper
- 1 packet of mange tous
- 1 tin of Peas
- 8 Button Mushrooms
- 1 tin of Chopped Tomatoes
- 1tbsp of Tomato Puree
- 300ml Chicken Stock
Directions
1. Chop up all of the meat, into decent sized chunks.
2. Chop up all of the vegetables, and have ready to fry.
3. Heat up a saucepan, and add some Olive Oil to it.
4. Start by browning the pork meat on all sides.
5. Add in the spice and ensure the meat is well covered in it.
6. Then add the vegetables in one by one, and fry for 3mins each time.
7. Add in the tomato puree, and cook through for a few minutes.
8. Add the chopped tomatoes, ensuring to mix well with the vegetable and meat mix.
9. Cover with the chicken stock, and cook for 45mins on a low to medium heat.
10. Add in the peas, and cook for a further 5mins.
Serve in a bowl, and enjoy the ratatouille made out of pork!
