If there is one food in life I go through alot, it’s beef burgers. But I always find there is a batch left over, and for that occasion, I make mini meatballs.
This is a simple recipe, but is delicious, as it takes mommas best meatballs, and conjures up an Italian treat.
Ingredients
For the Meatballs
- 100g Minced Beef
- 2tsp Salt
For the Sauce
- 1 Red Onion
- 2 cloves of Garlic
- 1tsp Oregano
- 1 tin of Chopped Tomatoes
- 1tsp Red Wine Vinegar
Directions
Pre-heat your oven to 200C/400F/Gas Mark 6.
1. Put the beef and salt in a bowl together, and mix thoroughly.
The salt helps with the binding of the meat, so you don’t need breadcrumbs or anything here.
2. Roll into round meatballs.
Put into the oven, and cook for 30mins.
3. For the sauce, Chop the onion and garlic, and add to a warm pan, with olive oil in it.
4. Cook for 5mins until translucent.
5. Add in the chopped tomatoes, vinegar and salt & pepper to the mixture.
6. Bring to the boil, then add the oregano.
7. Allow to simmer for 30mins.
8. Take the meatballs out of the oven, and add to the sauce.
8. Cook for a further 15mins, until the sauce has thickened, and coated the meatballs nicely.
