Pickles

Making fridge pickles is a very easy and satisfying pass time, as it ensures there is no waste in the vegetable box!

It has only been a recent event that Pickles have become somewhat important to me when creating burgers or sandwiches.

I suppose I didn’t really understand how important they were, adding that little bit of bite my bored tastebuds needed.

Cucumbers as well, not my favourite thing, yet I love them when they are pickled. So here is how to create a quick fridge pickle to be proud of.

Ingredients

  • 1 Cup of White Wine Vinegar
  • 1 Cup of Water
  • 1 Cup of Sugar
  • 2 Yellow Peppers
  • 1 Cucumber

How to make the Pickle

Whilst I have specified a measurement in Cups for the vinegar, sugar and water, it doesn’t really matter.

What matters is that they all equal the same volume, so it could be a spoon or a jar.

1. Put the vinegar, water and sugar into a saucepan, and place on a low heat. Bring up to simmer, and do so for 15mins, ensuring the sugar is fully dissolved.

2. Chop the cucumber and peppers into fine slithers. I use the food processor for this, its much easier.

3. Sterilise the jar you will be holding the pickle in, drying it thoroughly.

4. Add the vegetables into the jar, until it comes to the top.

5. Pour in the pickling juice from the saucepan, ensuring it comes to the top of the jar also.

6. Leave it to cool completely before putting the lid on.

Put it in the fridge for 48 jours in order the vegetables to pickle correctly. Enjoy with a sandwich or a burger!

Cheese & Pickle Burger

The tastiest burger I have made yet. It’s a belter.

To celebrate my journey looking for the best burger in Belfast, I suppose it is necessary to talk you through my favourite burger recipes.

The majority involve cheese and onion, but that can be a bit boring for some.

So here goes, I take my first pickle recipe, pair it with cheese, and give you this…

Ingredients

Burger

  • 1lb of minced beef, preferably chuck
  • 1tsp Salt

Red Onion Relish

  • 50g Butter
  • 3 Small Red Onions
  • 1tbsp Soft Brown Sugar
  • 2tbsp Red Wine Vinegar

Extras

  • Cheese Slices
  • Salt & Pepper to taste

How to build the Burger

1. Make up my recipe for Red Onion Relish, which in itself, is a pickle.

2. Put the mince into a mixing bowl and add the salt.

Now, that seems odd, no bread or milk or anything else?

No, the Salt brings out a specific protein in the meat, which helps it adhere, making it easy to create burger patties without extra “glue”.

3. Mix this together and form it into six balls.

4. Take each ball, and place it below some greaseproof paper. Squash it down with a pan. Form back into a round.

5. Add some olive oil to a pan, on a medium to high heat.

6. Fry the burger on one side for 5mins, until it is charred.

7. flip over the burger and do the same as step 6.

8. Flip again, this time putting the cheese slice on the top of the burger.

9. Cover with a lid and allow the cheese to melt.

10. In the meantime, Cut a burger bun in half, and add mustard to each side of it.

11. Place some of the relish on the bottom bun.

12. Lift the lid off the pan, and remove the burger, adding it on top of the red onion relish.

Eat it. Then wish you had another. You do, there was six balls, remember?

Red Onion Relish

Taking the humble red onion, and turning it into a pickled relish, to add to a tremendous burger.

As seen on another blog post near you, this month I embarked on a quest to find the best burger in Belfast.

However, not only does great beef make a great burger, so do some of the accompaniments.

To make a great burger, you need a great pickle, and this pickled relish should do just the trick.

Ingredients

  • 50g Butter
  • 3 Small Red Onions
  • 1tbsp Soft Brown Sugar
  • 2tbsp Red Wine Vinegar

How to make the Relish

1. Put a saucepan onto a low to medium heat. Add the butter and melt gently.

2. When the butter has melted, add the onions, chopped.

3. Cook for 15mins, stirring frequently until the onions become soft. They should have no colour.

4. Add in the sugar and vinegar. Turn up the heat and continue to cook for 8mins.

Serve in a sandwich or in this case, on a big fat burger.

Barbecue Sauce

The ultimate BBQ Sauce. Period. It’s even got whisky in it!

Barbecue just wouldn’t be barbecue without a barbecue sauce.

I must admit, I have only recently become a lover, finding it too sweet in the past.

But now I love it, and this recipe is the best I have created yet, although I am sure I could do better.

Cheats Pizza

The easy way to make pizza on a budget, as well as on a tight schedule.

I do make a full scale version of my pizza recipe, using previously posted recipes, but I am a person who works heavily, and doesn’t always have the time to prove bread, etc.

In that case., I have a quick base recipe that really works, and allows me to eat pizza whenever I want.
